  • Ingredients:

    • 1 cup white quinoa
    • 2 boneless, skinless chicken breasts
    • 2 tbsp olive oil
    • Salt and pepper
    • 1 cucumber, diced
    • 1 red bell pepper, sliced
    • 1/4 cup red onion, chopped
    • 1/4 cup fresh parsley, chopped
    • Juice of 1 lemon
    • 3 tbsp olive oil
    • 1 tbsp Dijon mustard
    • Optional: feta cheese, avocado slices


    • Cook white quinoa and set aside.
    • Season and cook chicken in olive oil until fully cooked. Slice into strips.
    • In a large bowl, combine quinoa, cucumber, red bell pepper, red onion, and parsley.
    • Add optional feta cheese and avocado.
    • Whisk lemon juice, olive oil, and Dijon mustard for dressing. Pour over the salad and toss.
    • Top with sliced chicken.
    • Serve and enjoy!
